Some Australian honeys cannot be pinned to one region. The country’s cross-state eucalypt honeys – yellow box, ironbark, and river red gum – come from trees that grow across several states, gathered by a migratory industry that follows the flowering north and inland rather than staying put. Each is therefore documented once here, and shown on the hub of every region that produces it.
