Some Canadian honeys cannot be pinned to one province. Clover blooms from Victoria to the Beauce, and the fast-setting pale crop of the prairie bloom is what Canadian honey is known for abroad. Basswood follows a tree whose Canadian range runs from southwestern New Brunswick through southern Quebec and Ontario to the southeast corner of Manitoba, and is bottled under its own name in two of those provinces. Each is therefore documented once here, and shown on the hub of every region that produces it.

Basswood (Linden) Honey Water-white honey from a tree that flowers for about two weeks a year, and stronger than the colour promises -- fresh, minty, with a long finish. Ontario jars say basswood; Quebec jars say tilleul. Buckwheat Honey (Miel de sarrasin) Near-black honey with a malt and molasses taste -- the honey 1880s Canadian beekeepers fed their bees through winter. The crop is scarce now and jars sell out. Quebec jars say sarrasin. Goldenrod Honey The last honey of the eastern Canadian year: bees fill their winter stores from the goldenrod bloom of August and September, and the jars are the surplus -- a bold, spicy amber that sets fast into a fine natural cream.
