Buckwheat Honey
The Story
Buckwheat honey is a crop honey, and the rule holds everywhere the plant grows: the honey is made where farmers sow buckwheat that year, and nowhere else. The plant is grown as a grain – a broadleaf pseudo-cereal sown in early summer, covered in small white flowers until frost – and its flowers give nectar only in the morning, so the bees work buckwheat before noon and whatever else is blooming after. A hundred years ago buckwheat covered enough ground that whole beekeeping economies were built on it: Slovenia’s eighteenth-century bee trade, the Dutch heaths, upstate New York and Pennsylvania – the United States Department of Agriculture titled a 1922 bulletin Beekeeping in the Buckwheat Region – and the Valtellina in the Italian Alps, where beekeeping spread because the buckwheat needed the bees. The crop shrank almost everywhere in the twentieth century, and the honey went with it. Today it is a scarce varietal across most of the West, and a revival project wherever the grain is returning.
What is in the jar is the same everywhere: near-black honey with red glints, a malt and molasses taste, less sweet than most honey, a smell producers themselves describe as farmyard, and a finish that catches at the back of the throat. What differs is how each country’s rules treat it. Russia wrote it into its state standard as one of three founding named honeys – the standard’s own taste line says it makes the throat rasp – and judges national competitions by its name. Poland set the world’s strictest pollen bar for it and carried that bar into an EU protected designation. Italy’s official tasting register has no sheet for it. Canada files it under a colour class. China long graded it as off-grade honey, sold it to the drug trade, and is now re-valuing it.
Buyers split over it in every language, and the trade says so itself – Poland’s sellers count as many supporters as opponents; Japan sells it as the adult’s honey. It is sarrasin in France, gryczany in Poland, grechishnyy in Russia, soba honey in Japan, ajdov med in Slovenia: one honey, named in every language of the northern world.
Characteristics
A near-black honey with red glints, thick when liquid, strong-smelling as soon as the jar is opened. The flavour runs to dark malt and molasses with a bitter edge, and the finish catches at the back of the throat. It is less sweet than most honey. It crystallizes, and how it does so varies by region, with each account stated by its own producers: France reports a slow, fine, spreadable set; Poland and the Baltics a slow, coarse set that layers, leaving a dark liquid band above the crystals – a pattern written into the Polish protected designation itself; Russia and East Asia report a faster, coarse set that lightens the colour.

Bee Species:
Apis mellifera, the western honey bee, makes buckwheat honey everywhere it is made. One subspecies has a history bound to this crop: the Carniolan bee of Slovenia became a world export breed inside an eighteenth-century beekeeping economy that the Slovenian state’s own account says grew on reliable late-summer buckwheat pasture.
The bee’s day on buckwheat is short. The flowers open in the morning and stop giving nectar around midday; a Hokkaido producer describes the bees’ flying stopping dead in the afternoon during soba season, and beekeepers there move hives onto the fields at two in the morning, in the cool, to spare the colonies. When the nectar is flowing, it flows heavily – ten to fifteen pounds of honey into a colony in a day.

The finish is the signature. Russia’s state standard describes the taste as sweet, pleasant and sharp, making the throat rasp; Polish sellers say slightly burning, even scratchy; a Belarusian apiary praises its light pinching of the gullet; French and North American producers call it piquant, a tickle. Across the whole range, a buckwheat honey that does not catch at the throat raises doubts about the label.
No honey divides buyers more openly, and the trade says so in its own words. A Polish family apiary counts as many supporters as opponents and warns against giving it as a gift unless you know the recipient. Japan sells it as the adult’s honey. A Slovenian producer writes that the smell recalls the stable and animals; an Austrian beekeeper told a national paper it stinks of the pigsty but tastes magnificent; and Chinese folk description reaches for smelly feet. The same jars win gold medals and best-dark-honey placings.

Defining Compounds:
The chemistry behind the flavour is unusually well mapped. The malty aroma is primarily 3-methylbutanal, with sotolon and beta-damascenone completing the honey’s most potent odorants; the short-chain acids – isovaleric and butanoic – carry the animal note, and an Italian trial honey was matched to a Polish reference by exactly this volatile fingerprint. The dark colour comes with high phenolic content: buckwheat honey showed the highest antioxidant readings among the floral sources in the landmark American comparison, the highest phenolics among Korean monofloral honeys, and enough of a phenolic signature that a Canadian laboratory identifies it chemically when filtration has removed the pollen. China’s bee research institute reports 4-hydroxybenzaldehyde as its own marker for the honey. Processing takes more from this honey than from most – one study measured a third of its antioxidant capacity lost – which is part of why it is so often sold raw.
Forage Origin:
Common buckwheat (Fagopyrum esculentum, Polygonaceae) is a grain crop from outside the grass family – kin to rhubarb and sorrel, grown and milled like wheat. Every name it carries describes it. The Latin Fagopyrum and the Dutch boecweite both mean beech-wheat, for the three-sided seed shaped like a small beechnut, and English took its word from the Dutch. The French sarrasin is the old word for Saracen, given to the dark grain; the Slavic names descend from the word for Greek. The plant was domesticated in southwest China, in the river gorges where Tibet, Yunnan and Sichuan meet – the wild ancestor still grows there – and spread west along the southern Himalaya, reaching Europe roughly three thousand years ago.
The flowers explain how the honey is made. Buckwheat flowers come in two forms; a plant carries only one, and a flower sets seed only when insects bring pollen from the other form – the pollen does not travel on the wind. A field without bees yields a small fraction of a normal seed crop, so farmers have wanted beekeepers beside their buckwheat for as long as both trades have existed. The flowers give nectar only in the morning, most heavily in cool weather, and keep opening until frost kills the plant. A field in flower is white, strongly scented, and can yield up to 150 pounds of honey to the acre.
Two other plants share the name and give no honey of this kind. Tartary buckwheat – the hardier, bitter species of the high Asian belts – pollinates itself, barely opens its flowers, and yields no honey. That is why China’s buckwheat honey comes from the north: the celebrated Tartary districts of the southwest grow grain and make no honey of it, while the common-buckwheat belts of the north make the honey. In the American West, “California buckwheat honey” comes from Eriogonum, a wild shrub in the same family but a different genus – a lighter, milder honey that shares nothing with this one but the word.
One modern fact runs through every revival: the new varieties are often poorer honey plants than the old ones. Slovenian and Dutch sources say it independently – today’s buckwheat yields nectar poorly beside the old landraces – and Canadian seed literature says the same of an export variety bred for shatter resistance. Where the grain has come back, the nectar has not always come back with it.
Pairings:
It goes where molasses and dark sugar go, and the pairing lists agree across languages. Cheese first: Stilton, blue and goat cheese in the English-speaking trade, white farmer’s cheese in Poland. Then coffee – a Belarusian beekeeper says buckwheat honey is the honey that works best in it – dark chocolate, meat glazes and marinades, and ice cream, where an American chef churns it in as an ingredient. In Japan it goes where black sugar goes: kinako mochi, vanilla ice cream, milk. Breton producers spread it on the buckwheat galette itself. Producers on three continents offer the same buyer’s guide: people who like dark beer, strong coffee or aged cheese usually like this honey at once.
Health Uses:
Buckwheat honey was the honey used in one widely cited modern study. A 2007 Pennsylvania pediatric trial gave children with night-time coughs a single bedtime dose of buckwheat honey, a honey-flavoured cough syrup, or nothing: parents rated the honey best, the honey outperformed no treatment on cough frequency, and the syrup did no better than no treatment on any measure. The study was small, single-dose and parent-scored; the National Honey Board was a collaborator; and later trials found similar results with other honeys – the finding concerns honey generally, demonstrated first with this one.
Origin Story
For two centuries, wherever buckwheat blanketed poor ground, beekeeping grew up beside it – usually because the farmers needed the bees before anyone prized the honey. The Italian agriculture ministry’s dossier for Valtellina honey states that beekeeping spread in that Alpine valley because the buckwheat crop depended on the bees’ pollination. In the Netherlands, where buckwheat covered eight percent of all farmland by the mid-1800s, farmers of the Gooi rented plots to visiting beekeepers, and in Drenthe the number of hives fell in step with buckwheat acreage once the crop lost money after 1880. Slovenia’s national beekeeping resolution records that the country’s eighteenth-century bee culture – the one that produced Anton Jansa, the beekeeper World Bee Day commemorates, and the Carniolan bee trade – grew on the basis of reliable late-summer buckwheat pasture. Jansa taught beekeepers to cart their hives to the buckwheat; the Slovene proverb says where there is buckwheat, there is honey; and in August 1930 a single train carried twenty-two wagons of bees from Bohinjska Bistrica to the buckwheat fields.
The United States had its own buckwheat country. In 1922 the Department of Agriculture published Farmers’ Bulletin 1216, Beekeeping in the Buckwheat Region – New York, Pennsylvania, northeastern Ohio, western Maryland and West Virginia, with two-thirds of the national acreage in New York and Pennsylvania alone. The bulletin describes the darkest honey then produced at scale in the country, sold to the baking trade for spice cakes, shipped in 180-pound kegs, with its best market in New York City. More than a million American acres were sown in 1918; by 1964, when the USDA stopped counting, fifty thousand remained.
Russia became the largest buckwheat country of all, and its honey story runs opposite to the West’s. Large sowings came with mechanization in the mid-twentieth century, and the named varietal grew with them – an Altai producer files the popular tales of tsars eating buckwheat honey under fairy tales. Today the Altai region grows most of the national crop, buckwheat honey is one of the founding honeys of the state standard, and a Tatarstan collective-farm chairman’s habit of paying beekeepers to park hives on his buckwheat survives as an agronomic proverb: who welcomes the bee will be rich.
Where the crop is returning, the honey returns hive by hive, by agreement. Brittany’s new buckwheat networks pair growers with beekeepers at about three hives to the hectare; a Dutch cooperative founded in 2024 is rebuilding the chain that vanished with the crop, and one Groningen beekeeper’s 2022 harvest – sixteen pots – measures the scale of the start; at Teglio in the Valtellina, university trials are re-learning a honey the valley lost.
Cultural Context
Buckwheat honey is the gingerbread honey of the northern world. Polish trade writing calls it the most preferred honey for piernik, and a 1927 Polish recipe ends with the reminder that for baking, buckwheat honey is best; Tula gingerbread in Russia is flavoured with it; Latvians bake it into piparkukas; and in France it is one of the classic honeys for pain d’epices – a Reims and Dijon tradition, not a Breton one, though Brittany’s beekeepers now bake medal-winning pain d’epices from their own miel de sarrasin. The logic is the same everywhere: a honey this strong survives spice, long baking and long keeping.
It is also a drinking honey. Chouchen, Brittany’s fermented honey drink, was traditionally made on buckwheat honey, with apple must to start the ferment – a Cornouaille hydromellerie working since 1929 still calls buckwheat honey indispensable, and the Barbe family has made its gallo-country cousin, chamillard, principally from buckwheat honey since 1921. American meaderies use it for dark, beer-like meads – one has taken a national gold with it – and a Kyoto honey house released a soba-honey mead in 2025, its brewer describing black-sugar sweetness and an amber-ale malt finish.
The literature of three countries carries the same picture: the whitest field and the darkest honey. Poland’s national epic Pan Tadeusz sets “buckwheat white as snow” in its opening lines, and Polish honey sellers themselves point out that the honey from those flowers is nearly black. Basho’s 1694 haiku offers a traveller flowering buckwheat as a mountain village’s only hospitality, and the buckwheat flower is an autumn season-word in Japanese poetry. Korea’s most loved short story, Lee Hyo-seok’s When Buckwheat Flowers Bloom, describes moonlit fields white as scattered salt – there is no honey in the story, but a Seoul urban-beekeeping collective now ships Jeju buckwheat honey paired with a sequel anthology in which six novelists continue it.
Its folk standing everywhere is the dark honey for winter. Russian tradition recommends it for the pale-faced – the anemic – for its iron, the same iron-and-recovery reputation runs through Ukraine, Belarus, China, Japan and Korea, and its late-August extraction brings the new crop fresh to the Honey Saviour fairs of the Slavic calendar. These are traditions of use, not medical findings.
Harvest & Forage
The harvest is set by the sowing. Buckwheat goes in after the last frost, flowers from midsummer until the first killing frost, and gives nectar only in the morning – so the honey comes off late in the beekeeper’s year, and in much of the world it is the season’s final extraction. The flow is weather-gated everywhere, and each region states the gate its own way: French producers put it at 18 to 25 degrees with air near saturation, and say some years are bumper and others catastrophic; Chinese bee literature credits the northern belts’ cool nights and wide day-night swing; the 1922 American bulletin said the honey came where the nights are cool.
The late season is also the scarcity mechanism. In Korea the two-week September flow overlaps the wintering-down of colonies, so few beekeepers work it at all; in Slovenia the buckwheat is the last pasture of the year and older beekeepers remember wintering colonies on the honey itself; everywhere, colonies must still be strong when most flows are finished.
A jar sold as buckwheat honey must meet different pollen requirements in different countries. Poland’s standard requires 45 percent buckwheat pollen – the strictest published figure, written into the EU specification of the Drahimski protected honey; Russia’s state standard asks 30 percent; the common convention elsewhere is about 45. Real jars vary widely – surveyed honeys sold as buckwheat run from a few percent to just over fifty – because the plant’s two flower forms shed pollen unequally, and a Polish market inspection has failed honeys labeled gryczany at half the required share. Producers manage purity the same way on every continent: hives beside or inside the field, the crop taken off as soon as the flow ends, and honest labels where the bees mixed the late flowers.
Beekeeping Context
The working arrangement between farmer and beekeeper is the oldest thing about this honey. Dutch farmers of the Gooi rented hive stands to visiting beekeepers because the bees raised their grain yields; a Tatarstan collective farm paid beekeepers per hive to park on its buckwheat; Brittany’s new buckwheat networks plan for about three hives to the hectare; Canadian extension literature tells growers an arrangement with an apiarist will be of mutual benefit. The crop needs the bees to set seed, and the beekeeper needs the fields – the honey is the visible product of that exchange.
It has always been a moved honey. Ontario beekeepers sent wagon-loads of hives to “a buckwheat district” in the 1880s; Slovenian bee trains ran to the ajda with priority over freight; a Grodno beekeeper today trucks hives twenty to thirty kilometres out to the fields; Hokkaido crews move colonies onto the soba at two in the morning.
It is sold two different ways. In the countries that name their honeys – Russia, Ukraine, Poland, the Baltics, Slovenia – it is a standard named varietal: an affordable staple in Russia, a step above rapeseed and level with linden in Poland, rare and prized in Slovenia. In the countries that grade by colour or blend in bulk, it surfaces as a specialty: a premium single-origin item in Japan sold under the domestic-origin label, a scarce specialty in France, a colour-class entry in Canada, and in China a once-off-grade honey now being revalued.
