Basswood (Linden) Honey
The Story
Basswood is the tree North American beekeepers call the bee tree. For about two weeks in late June and early July its flowers carry enough nectar that a colony within range of a stand fills a box in a few days, and then the bloom is finished for the year.
Colour normally predicts strength in honey, and this is the honey that breaks the rule: among the palest Canada produces, and among the most assertive.
The jar says one of three things. Ontario shelves say basswood, Quebec shelves say tilleul, and a number of Canadian sellers lead with linden and gloss it to basswood underneath. All three name the same genus of tree.
Most of the Canadian crop never carries any of those names. Basswood flowers alongside clover and the rest of the summer bloom, and unless a beekeeper can attribute a batch to it, the jar reads summer blossom or wildflower instead. A basswood label is a beekeeper’s judgement rather than a laboratory result – and for this honey the laboratory is of limited help, because linden pollen turns up in the jar well below the share of the nectar it stands for.
It is also the honey Canadian beekeepers once organised to keep. When the sawmills and the pulp machines were taking the lindens out of southern Ontario in the 1890s, the province’s beekeepers argued the case for the tree at their own association, and then went planting.
Characteristics
Water-white to pale amber with a faint green cast when it is fresh, and thinner in the jar than most Canadian honey. The aroma is strong and green, the entry cleanly sweet, and the finish cool and long, with a menthol quality that the trade calls mint and that comes from the tree rather than from any mint. Darker honey is normally stronger honey; a Quebec seller states plainly that linden is where that rule fails, and this pale honey carries the bigger flavour. Crystallization is disputed among sellers – some report it setting quickly and finely, others more slowly than most honeys – so treat the texture as batch-dependent rather than fixed.

Bee Species:
Apis mellifera, the western honey bee, produces every Canadian jar of this honey. No bee native to Canada makes honey at all.
What distinguishes the bee’s work on basswood is speed. The flowers hang in loose clusters of four to forty on a stalk fixed to a leafy bract, and the whole tree opens over roughly two weeks, so a colony within range meets a large, brief supply and works it hard. Ontario beekeepers describe the flow as a stampede, and report supers filling in two to four days when the weather holds. That rate is what makes a clean batch possible at all: the basswood flow runs fast enough to dominate what the colony brings in, rather than blending gradually into the summer bloom.
The honey bee is one visitor among many. A study of Tilia pollination recorded sixty-six insect species from twenty-nine families on the flowers, bees and flies through the day and moths after dark.

Tasting Notes:
The menthol note is the one thing nearly every Canadian and Quebec seller names, in two languages and in different words, which is the strongest reason to trust it: mint and lemon, mint and apple, a hint of lime or mint, delicate and minty, notes mentholees. It is not mint. It is the tree’s own aromatics, and it reads as coolness rather than flavour, arriving late and staying.
The most useful description on record comes from an Ontario beekeeper writing about her own jars rather than selling them, and it is broader than the marketing copy: buttery, waxy, metallic or minty, with the metallic and buttery notes reminding her of buttery popcorn.
Producers in the Hautes-Laurentides and Lotbiniere add tropical fruit – pineapple and passionfruit – to the same honey. In specialty markets it is described as sweet and fruity ahead of the cool finish.

Forage Origin:
Primary: American basswood (basswood, linden, whitewood, bee tree, Tilia americana, Malvaceae). The northernmost species of its genus and the only Tilia native to North America. Its Canadian range runs from southwestern New Brunswick west through southern Quebec and southern and western Ontario to the southeast corner of Manitoba – which places the tree in the eastern provinces that hold most of Canada’s beekeepers, and leaves it out of the prairie provinces that produce four fifths of the country’s honey. It rarely forms pure stands, and is dominant in a single forest type, sugar maple-basswood. Flowering begins after the leaves open, generally in June but running from late May to early July with latitude and the year’s temperatures, and lasts about two weeks. The flowers are small, fragrant and yellow-white, borne in loose clusters on a stalk attached to a leafy bract, and all stages of flowering are present on one tree at once. The United States Forest Service puts the yield plainly: “Basswood flowers produce an abundance of nectar from which choice honey is made. In fact, in some parts of its range basswood is known as the bee-tree.”
Secondary: littleleaf linden (small-leaved lime, Tilia cordata, Malvaceae). A European species, not native to Canada, and one of the most widely planted street trees in the country. Montreal’s own tree inventory puts linden among its commonest genera and the littleleaf European linden as the commonest species within it; it is likewise one of the most common street trees in Toronto and the surrounding region. It flowers in early July, a little after the native basswood. Canadian jars reflect the mixture honestly where they can: an Ottawa producer describes its linden honey as coming from basswood and other linden tree flowers rather than from one species.
Basswood, linden and lime all name the same genus. Basswood is the North American word, linden the European one and increasingly the Canadian retail one, and lime the British – the last worth setting aside in Canada, because it has nothing to do with the citrus fruit. Every Canadian seller that leads with one of the words glosses it to another, which is a fair measure of how much help the buyer needs. The name basswood itself comes from bast, the tree’s fibrous inner bark, which was soaked and separated into cordage, netting and matting long before anyone in North America kept bees. The soft, even, close-grained wood is the carver’s standard timber and is still cut for instruments and turnery.
Pairings:
The menthol note is volatile, which sets the rule: use it where it is warmed rather than cooked. Producers on both sides of the Ottawa river suggest much the same things.
Stir it into herbal and mint teas, where the heat of the cup lifts the cool note instead of driving it off. Serve it against a soft-rinded cheese – an Ottawa producer suggests Camembert with green grapes, pecans and a crusty baguette – or over a nutty hard cheese, which is how one of its Ontario buyers reports eating it. It is suggested over seared scallops and poached pears, and it is thin enough to drizzle straight from the spoon.
Keep it out of long baking. Heat that leaves a clover honey much as it was will drive off the aromatics that distinguish this one.
Origin Story
Basswood carried two values at once in nineteenth-century Ontario, and they worked against each other. The bloom made what the trade called water-white honey, the most prized grade on the market. The wood was soft and light, and went into musical instruments, fruit baskets and window blinds. Through the 1880s and 1890s the mills took it faster than it grew back.
Ontario’s beekeepers noticed and said so. Allen Pringle – a Selby farmer, Darwinist and pamphleteer who had twice been president of the province’s beekeepers’ association and who ran the Ontario apiary exhibit at the 1893 Chicago world’s fair – told the association that year that the linden was “rapidly disappearing down the open and capacious maws of the pulp machines, the sawmills and the fallow fires,” faster than seedlings and saplings were replacing it. American journals of the same years were pressing beekeepers to plant lindens along roadsides and field lines. The historian Jennifer Bonnell, who has worked through the association records and the apicultural press of the region, records that beekeepers responded to the loss of basswood and other forage trees with tree-planting campaigns in both town and country.
The clearest Canadian instance came out of a ruined business. David Allanson Jones of Beeton, Ontario, was the country’s first commercial beekeeper: a thousand colonies by 1890, founder and first president of the provincial association, founder of the Canadian Bee Journal, and the man for whom the village of Clarksville was renamed in 1874. In 1893 his factory burned. Foul brood took the hives that survived, and he went bankrupt. What he did afterwards was become postmaster and plant out the streets of the town named after his bees – “trees that bees would like: soft maple, basswood, and elm.” Library and Archives Canada records that some of those trees still stood when its account of him was written.
The tree is not scarce in Canada today, and it is commonest where people put it. No source claims the beekeepers’ campaigns produced that result, and this page does not: a century of Canadian street planting has been driven by nursery supply, salt tolerance and canopy targets rather than by apiculture. The federal Dominion Arboretum in Ottawa recorded the consequence as a drawback. Its account of littleleaf linden notes that the early-July bloom is conspicuous for its scent and for the number of bees around the trees, and adds that because the bees are so fond of the blossoms, this “may be reason enough for not planting this species on streets or lawns.”
Cultural Context
The tree carries a longer material history than the honey does. Its inner bark was the cordage fibre of the eastern woodlands, worked into rope, netting, mats and baskets, and the English name basswood is a worn-down form of bastwood. There is no pre-contact honey history to attach to any of that: there were no honey bees in North America before they were brought here, and the documented Indigenous sweeteners of this part of the continent are maple and birch.
In Quebec the name arrives already familiar. Tilleul is a household word in French for the flower and for the tea made from it, so a Quebec shopper meets miel de tilleul knowing what a tilleul is. Basswood carries no such association in English.
One recent Canadian instance of the honey turning up where the trees were planted: the rooftop apiary at Wilfrid Laurier University’s building on One Market Street in Brantford found that basswood was a dominant flavour in its crop, from a tree common in that city’s streets. The honey has since placed at district, provincial and Royal Winter Fair competitions.
Harvest & Forage
The bloom is the constraint. Roughly two weeks, generally late June into mid-July in the Canadian range, moving with latitude and with the year, and it cannot be moved or extended.
Within that window the nectar is weather-gated. Warmth is required before the flowers yield at all – an early American observation, still quoted, put the threshold at about 17.8 degrees Celsius in northern Indiana – and Canadian and northern producers agree on the pattern that follows: cool nights and warm mornings drive the strongest flow, and hot dry weather shuts it down. A late frost, a dry spring or an off year in the trees can remove the crop entirely. Beekeepers who work basswood do not get it every season.
Purity is a matter of timing and of where the hives already stand. Clover, sweet clover, raspberry and the rest of the summer bloom run alongside or into the basswood, so a beekeeper aiming for a clean batch takes the crop off immediately after the trees finish rather than at the end of summer. One Ontario producer states the method exactly: extract directly after the basswood blooms, which gives the summer honey its minty character. Others place a single bee-yard within range of a stand and accept that the basswood will be a small part of the year’s crop.
Whether a honey counts as unifloral – from a single flower source – is decided by a pollen count, and the figure that count has to beat is set per plant rather than once for all honey. Bees do not carry pollen home in proportion to the nectar they take, so some plants are heavily over-represented in the sediment and others barely register. The International Honey Commission’s table sets the bar accordingly: chestnut honey has to exceed eighty-six percent chestnut pollen and eucalyptus eighty-three, rapeseed and phacelia sixty.
Linden sits at the other end. The Commission lists Tilia among the pollen types that can be under-represented, at one to fifty-six percent of the grains in honeys accepted as unifloral linden, and it instructs analysts to read sensory and physical measurements alongside the count rather than rely on the count alone. Where a national rule for linden exists at all it is set lower again: Bulgaria requires thirty percent. Canada has set no figure for any flower, and no Canadian pollen study of this honey was found. So what stands behind a Canadian basswood label is the beekeeper’s own attribution of the batch.
Beekeeping Context
This is small-operation honey. The producers bottling it under its own name in Canada are family apiaries and single-site operations in southern Ontario, the Ottawa valley and southern Quebec, not the large migratory outfits that make most of the national crop on the prairies – which is a matter of where the tree grows rather than of anyone’s preference.
The working pattern is consistent across them. A bee-yard sits within flight range of a woodlot stand, a fencerow line or a stretch of planted street trees; the beekeeper watches the bloom, takes the crop off immediately the trees finish, and keeps it separate from the summer blossom that follows. Most extract cold and bottle before crystallisation begins. The volumes are small and the batches are sold as they come: limited quantity, micro-batch and small harvest are the ordinary Canadian wordings, and jars are frequently listed as out of stock between harvests.
The price follows the scarcity, and the jars are sized for it. Huckleberry Hives lists a 150 gram jar at ten dollars; Clovermead, another Ontario family apiary, sells 500 grams of its goldenrod honey for the same money. By weight that puts basswood at roughly three times the price of a fall varietal from the same province, and it is sold direct – at the farm gate, at markets and from producers’ own shops – rather than through supermarkets.
In Quebec the same honey sits inside a more developed vocabulary of typed and seasonal bottling, where producers treat their harvests the way a winemaker treats vintages, and where one Lotbiniere producer had a linden batch assayed for pollen and reported eighty-five percent – an exceptional figure against the international range, from a private laboratory report, and one that should be read as that producer’s batch rather than as a Canadian norm.
